Easy Egg Drop Soup Recipe

If you’re new to making broth, the idea of integrating it into your everyday meals can be intimidating. Most of us have been happily cooking and eating without it, after all, for years.

How can we take a food that wasn’t even on our radar…and transition it into a staple food?

Forget the big picture! How do you eat it today?

Well, I can’t solve all your problems. But I can solve that one.

I’m going to share a recipe that has changed my kitchen–that you can make today. You won’t believe how easy it is.

Easy Egg Drop Soup

To make one serving, bring a portion of broth to a boil on your stove top.

Crack open eggs into a bowl.

Pour eggs into broth and whisk with a fork.

Whisk with fork for thirty seconds then take off heat and pour into serving bowl.

Add Celtic Sea Salt to taste.

You’re done. Really.

You’ve just made a serving of incredibly delicious soup that’s also very good for your gut. In under two minutes.

The simplest version is wonderful.

But you can get creative and come up with your own variations. Here are a few of mine!

Asian Egg Drop Soup

Before adding salt, season with organic tamari or soy sauce. Salt to taste, if needed (it usually isn’t).

Bacon Cheeseburger Egg Drop Soup

Great when I have leftover bacon from breakfast! (Essentially, when my sons and husband aren’t home.)

Simply chop up cooked, organic bacon into small pieces and portion out into finished soup. Top with a handful of grated, raw cheese.

Farmer’s Egg Drop Soup

A perfect variation when you’re feeling the need for some grains.

30-45 minutes before serving, chop some onions and throw them in a cast iron or stainless steel skillet over a low, slow heat to caramelize. Just before serving soup, break up pieces of hearty, sourdough bread into each bowl. Add the portion of onions and a sprinkling of cheese, if you like.

Egg Drop Buffet

Make enough soup for each person being served. Then set out salt, tamari sauce, butter, and any other seasonings you enjoy, as well as bowls of bread, meats, cheese, caramelized onions, and cooked veggies.

Let each person make his or her own variation — a sure hit with kids!

From my kitchen to yours. Enjoy.

Love,

Laurie
