Jamie’s Fizzy End of The Year Garden Food
In order to show you how easy this really is, how basic this really is, I want to show you what I do at the end of the year to make end of the year garden food. I did the very same method that I did with the kraut. I copped up my vegetables and submerged it in some water with whey and good salt.

I use sweet peppers, hot peppers, carrots, jalapeños, onions, garlic, black peppercorn seeds, some oregano. What I find is whatever you put in a bottle, if you put it out of your garden, you’re pretty safe because these are the foods that you like, those are the foods that you like together. And I realize you can get into trouble with some things. But I just started stuffing at the end of the season.

I don’t put tomatoes in my lacto-ferments, so this does have red things in it but those red things are all peppers.

And if you’ll notice there is a leaf in the top. I’m not really sure what that leaf is but I think that was a grape leaf, or sometimes I use a horseradish leaf. Which sounds terrible, but it really doesn’t give you any flavor.

And so I make sure that’s on the top to make sure that everything is underneath that brine. Let it ferment for a few days, then put in cold storage.

You can put it on top of beans, with cheese and crackers… you can even blend it up into a salsa.
