Laurie’s Easy 1-Quart Fizzy Kraut

1 Head Organic Cabbage (remove outer leaves)
1 Tbsp salt
1 Tbsp whey

Core cabbage and chop or dice into small pieces. In a bowl, mix cabbage with 1 Tbsp salt and 1 Tbsp whey. Pound the cabbage until it begins weeping. Transfer the kraut to a quart jar and make sure that all pieces of cabbage are submerged in the liquid. Use a canning lid plus a plastic lid to seal the kraut, and set it on your counter for 3 days. When done, move it to your refrigerator.

What meals does kraut go best with?

We like to eat our kraut with breakfast food.

​

It goes beautiful with potatoes, eggs, sausage, anything that you would eat for breakfast.

​

We also use it as a condiment. If you were to slather something on a cracker, this could go on top.

​

We put ours on top of pizza — Deviled eggs, that’s another thing. Small diced pieces of top of deviled eggs.

​

Or, kraut goes well with Scrambled eggs and mustard.

​

Or, all by itself.

​

We like to put just a small dab on the side of the plate at any meal and it aids anything that you’re eating.
