What is a sorbet? Don’t let the unfamiliar name throw you, it’s just a fancy name for frozen, pureed fruit. That’s it.

If you research it, you’ll find that others have tried to make it fancier by adding other ingredients. But at the end of the day, sorbet is fruit that’s pureed, frozen, and then re-blended before serving.

What makes a great sorbet? Dead ripe fruit. Period.

Fruit by its design becomes full of natural sugars just before it begins to break down, and that is the precise moment to gather rich, sweet fruit for a delicious, one-ingredient sorbet.

Sorbet is just one ingredient. No need to make it hard.
