Rich Chicken Gravy & Zippy Cheese Sauce

Rich Chicken Gravy

The Basic Cream sauce above has great versatility in that it can be transformed into a rich meaty gravy with just a few changes. I use the same ratios but change the ingredients just a smidge:

  • 1 Tbsp chicken fat

  • 1 Tbsp flour

  • 1 cup chicken broth

  • ¼ tsp Celtic Salt

  • ¼ tsp black pepper

Follow the directions above for Basic Cream Sauce. This can be done with other meats as well such as beef or pork.

Zippy Cheese Sauce

  • ¼ cup butter

  • ¼ cup flour

  • ½ tsp salt

  • 2 drops tabasco sauce

  • 1 cup whole milk

  • ¼ tsp black pepper

  • ¼ tsp dry mustard

  • ¼ tsp worcestershire sauce

  • ½ lb. grated cheddar cheese

Brown the flour in butter for 1-2 minutes. Add the milk slowly stirring constantly to thicken. Add the salt, Tabasco sauce, pepper, mustard and Worcestershire and stir to incorporate. Last, melt the grated cheese in to the sauce while stirring over low/medium heat being careful not to burn the cheese. Serve over meat, vegetables or anything that needs a thick and rich cheese sauce.
